Pecan Brownies


175g butter

3 eggs

250g sugar (castor)

75g flour (plain)

175g chocolate (dark good quality)

40g pecans

40g cocoa powder


  1. Place a bowl of water on your stove and put a melt proof bowl on top (the bowl shouldn’t touch the water). Break the chocolate into pieces and put in the bowl with the butter. Melt gently. Take off the heat and allow it to cool
  2. In a bowl whip the eggs and sugar until they are light in colour, thick and creamy.
  3. Gently fold the egg mixture into the chocolate. Sift in the flour and cocoa and fold. Add the pecans.
  4. Place the mixture in a lined baking tin 20cm (square) and bake in a preheated oven for 25mins 180/Gas 4
  5. Allow to cool if you can and cut into squares!
